TEA CAKES / SUGAR BUNS 

Tea Cakes or Sugar Buns  utilising Goodman Fielder Ingredients Scone Premix:

Sugar Buns (120g) - 17

Tea Cakes (90g) - 22

Tea Cakes | 18 mins 

Ingredients

  • 1KG Scone Premix
  • 600g Water (approx. 25C)
  • 125g Eggs
  • 3g Lemon Paste
  • 250g Sultanas
  • 65g Mixed Peel

Method

Add all ingredients into mixing bowl with the liquids first.

Using a paddle, mix on slow speed until all ingredients are combined.

Deposit 90g into standard lined muffin tin for a Tea Cake or hand drop 120g batter onto a lined baking tray.

Pipe a spot of raspberry jam into the top of each Tea Cake / Sugar Bun and then sprinkle with A1 Sugar.

Bake at 220°C for approx. 18 minutes for Tea Cakes and approx.

20 minutes for Sugar Buns.
